Often hidden in cocktails and relegated to the background of the culinary world, spirits deserve just as much attention and appreciation as fine wines. Whether you're a seasoned connoisseur or a curious food and beverage enthusiast, this course will elevate your understanding and enjoyment of a diverse range of spirit categories, from whiskey and mezcal to baijiu. Through tastings and expert instruction, you'll learn how to apply your newfound knowledge and appreciation to your cocktail glass.
In our weeks together, we will explore how the world’s most popular liquors are made—from their origin stories to their commercial production techniques. We will dive into the ways in which choices made by distillers, such as fermentation duration and barrel selection for aging, can shape the characteristics and quality of the final product. We’ll also learn about more practical applications, such as how to understand label terminology, techniques for expertly incorporating spirits into mixed drinks, and how to tell the good from the mediocre. Guest speakers will offer insider looks at how the industry thrives and exclusive peeks into an operating distillery. The course will include guided tastings.

This course includes optional spirits tastings. Students will spend approximately $150–$200 to purchase the spirits. More details will be provided prior to the first class.

Spirits Educator
Victoria Chow is a spirits educator and expert with a Wine & Spirit Education Trust (WSET) Level 3 spirits certification and a general certificate in distilling from the Institute of Brewing & Distilling. She is a judge for major spirit competitions and consults for global hospitality groups on their beverage programs. In 2019, she was included in the Forbes 30 Under 30 Asia list and selected for the WSET and International Wine & Spirit Competition's Future 50 Awards.Textbooks for this course:
